- Step 1: Boil potatoes, peel, cube.
- Step 2: Dry roast coriander & 1 tsp cumin seeds.
- Step 3: Heat oil, add remaining cumin seeds, ginger, chillies.
- Step 4: Stir in potatoes, roasted spice, turmeric, salt.
- Step 5: Cook gently 10 mins.
- Step 6: Sprinkle amchoor, coriander leaves.
