  1. Step 1: Boil potatoes, peel, cube.
  2. Step 2: Dry roast coriander & 1 tsp cumin seeds.
  3. Step 3: Heat oil, add remaining cumin seeds, ginger, chillies.
  4. Step 4: Stir in potatoes, roasted spice, turmeric, salt.
  5. Step 5: Cook gently 10 mins.
  6. Step 6: Sprinkle amchoor, coriander leaves.
